One of our very first Iron Chef's was Iron Chef Bacon. Can you believe we've been doing these Iron Chefs for almost 4 years??!! Yowa!! I remember loooving this mashed potato casserole courtesy of Bon Appetit. I, of course, thought it was the winner, but my presentation was pretty lame. Oh well. I've made this recipe several times since, and most recently at a Friends-giving party. I bet it would have been voted the winner had those friends attended the Iron Chef party. ;) This recipe is filled with lots of goodness: butter, potatoes, cheese, and bacon! Mmmm. Trust me; you'll love it and your friends will thank you for it! Enjoy!
Ingredients:
6 slices thick-cut smoked bacon (preferably applewood-smoked)
3 large green onions (white and pale green parts only), finely chopped
3 pounds russet potatoes, peeled, cut into 1 1/2-inch cubes
3/4 cup sour cream
1/3 cup whole milk
1/4 cup (1/2 stick) butter
2 cups (about 8 ounces) coarsely grated smoked Gouda, divided
Take out a 13x9 baking dish and butter it. I omitted buttering the dish. I figured it wasn't needed since mashed potatoes aren't exactly sticky. Place the peeled and diced potatoes in a large pot with enough water to cover the potatoes. Throw in some salt and boil with the lid slightly ajar for about 30 minutes or until the potatoes come out fork tender.
Meanwhile; cook bacon in a large heavy skillet until nice and crispy. I used the entire package of bacon. I mean really; 6 pieces?! Anyway, once the bacon is sufficiently crispy; transfer to a paper towel to drain. Then take out a small bowl; and add in the chopped green onions along with the crumbled bacon. Stir and set aside.
Once the potatoes are fork tender; drain into a colander. Then place potatoes back in the same large pot, and while cooking over medium heat; stir until potatoes are dry and light film forms in the bottom of the pot. Next, add in the sour cream, milk, and butter. Use a potato masher to mash up the potatoes until almost smooth. Honestly, I used an immersion blender at this point because my masher wasn't doing a good job at smoothing the potatoes. They were quite chunky. Then, stir in 1 1/2 cups of the smoked Gouda and 1 cup of the bacon mixture. Season with salt and pepper. Next, spread the potato mixture into the prepared baking dish and sprinkle with the remaining Gouda.
Pre-heat oven to 375 and then bake the potatoes for about 30 minutes or until the cheese melts and the edges of the potatoes start boiling. Sprinkle reserved bacon mixture on top and serve.

Chipotle Rosemary Sweet Potato Soup
I know I've said time and time again how much I dislike cold weather. But, it's so nice sometimes to make warm and comforting foods during this time of the year. I had a bunch of sweet potatoes sitting in my fridge begging me to do something with them. I did some handy-dandy googling, and came across this recipe from Tasty Trials for sweet potato soup. This soup was very good. I liked the smokiness that the chipotle provided, and I'm always looking for a way to use up some of my rosemary. The bacon added a nice touch as well. I will definitely make this soup again, and try to use up my sweet potatoes a lot quicker next time.
Ingredients:
1 1/2 pounds sweet potatoes
1/2 pound carrots
2-3 tbsp olive oil
3/4 tsp cumin, divided
2 tsp chopped rosemary, divided
3 strips of bacon, chopped
1 leek, chopped
1 shallot, chopped
3 garlic cloves, minced
1 tsp pureed chipotle peppers in adobo sauce
1/4 c dry white wine
3 c low-sodium chicken broth
1/2 c heavy cream
salt and pepper to taste
Grated Cheese, optional
First pre-heat your oven to 400 degrees, and then peel and chop the sweet potatoes and the carrots. Doesn't have to be pretty. Pour the sweet potatoes and the carrots into a glass baking dish (9x13) and sprinkle with olive oil (a couple teaspoons). Add in 1/2 tsp cumin and 1 tsp rosemary. Season with salt and pepper. Toss well. Place in the oven and roast for 30 minutes or when they're fork tender. Remove from oven and set aside.
In a large pot, crisp up the bacon and set on a paper towel for later use. In the same pot, add in the leeks and the chopped shallots. Saute over low heat for 10 to 15 minutes until they caramelize. Then, add in the remaining cumin and rosemary, garlic, and chipotle puree. Stir, and let cook for a couple minutes. Add in the wine, and let reduce for a couple minutes. Then toss in the sweet potato mixture. Stir well. Add the chicken stock and simmer covered for 10 to 15 minutes. Use an immersion blender (or a regular ol' blender) and puree the mixture till smooth. Next, stir in the heavy cream and if necessary season with salt and pepper. Serve in bowls topped with the reserved bacon. Throw in some cheese if you are using. Enjoy!

Spaghetti Squash Carbonara
I've been making a tooon of recipes ever since starting this Paleo/Primal lifestyle. Sorry, I haven't posted them all. Some have been hits and some have been misses. I will definitely post some of my favorites soon. I have to say that I had my doubts concerning this Spaghetti Squash Carbonara that Health Bent posted on their blog. I thought it was going to be too simple, and not enough ingredients. But, it was seriously delicious. I don't know what it is, but I think red pepper flakes and garlic can really elevate a dish. I've never tried spaghetti squash before, but I have to say I really love it. I really can't believe I've never tried a recipe before with this particular ingredient. Where have I been??? Anyway, I really like this recipe and I know I will be making it again and again. Enjoy!
Ingredients:
1 spaghetti squash
1 lb. bacon
1 yellow onion, chopped
4 cloves garlic, minced
2 handfuls of walnuts, roughly chopped
Parmesan cheese to taste (optional)
Red pepper flakes to taste
Salt and Pepper to taste
Preheat your oven to 400 degrees. Cut your spaghetti squash in half and scrape out the seeds. Place in the oven and roast for 20 minutes. Then, flip the squash and roast for an additional 20 minutes. Remove from the oven and scrape out the squash and place in a serving bowl.
While the squash is roasting, take out a non-stick skillet and set to medium heat. Chop the bacon into 1/2 inch pieces and place in the pan. Cook until the bacon is nice and crispy about 5 to 10 minutes. Scrape out the bacon and place on a paper towel. Next, add the chopped onion and the minced garlic and cook until the onion is translucent about 5 minutes. I also added in the red pepper flakes at this point, too. Then, pour into the serving bowl. Heat the chopped walnuts in a skillet for about 5 minutes. Remove from heat and into toss them into the serving bowl. Top with the chopped bacon and parmesan cheese if using. Toss together and enjoy.
